Quick question, should I have the sides on like in this photo? Or should I do multiple versions for multiple roles? Like, AA without sides, trans with sides, etc...

Main thing about your model you really need to fix are the wheels, very blocky right now, take a look at how many sides other trucks/cars have on there wheels ingame. Also you can loose a lot of the 3D detail you've put on the inner rim of them, most of that you can do with a normal map and it will generally look better too.
As for different versions, really depends on what they are, got refs of each version? Main problem with lots of versions is UV space used and if there is a real need for them.

Another little update before I call it a night.
properly fitted the tray to the chassis, did a little work on the interior, added a few details to the tray, more detail to the chassis, and remade the wheels.
Currently at 6026 tris.
