Advice on mapping joystick please

Calling you expert pilots, can you help me and others who may not understand what's what in the controls part of the options menu? Wtf is yaw etc?

lol, the old side winders, use to have one a bit similar back in the day but the cheaper version from what you have there
Well for the stick itself, forwards = Pitch down, backwards = pitch up. Left = Roll Left, Right = roll right.
The silver leaver to the left is the throttle, should be set to forwards = throttle +, backwards = throttle -. Remember in BF2 when the throttle is in the middle is when its off, if its backwards then if your in the Harrier you have the throttle engine engaged and the further back you go the more power your putting into your throttle engine
Front trigger should be set up for primary weapon fire (ie, MGs)
Button set for secondary weapon fire (missile / bombs / rockets).
Button 3 I would set for Rudder Left, since I doubt this has a twist handle or you have rudder pedals?
Button 4 Rudder Right.
The HAT switch above if you can code it to be the POVs possibly but not sure how you go about that without the Saitek Programming software.
The other buttons really up to you, probably best to set them up for different weapon slots and VOIP/Mumble talk buttons etc

How would one go about making a Harrier go from hover to forward flight without it falling from the sky?

The Harrier can't take off vertically in r/l with a full tank of fuel and weapons, its simply too heavy. At air shows where the Harrier dose take off vertically it has no weapons and only a tiny bit of fuel in the tank.
The Harrier in reality is only a STOVL (Short take-off, Vertical Landing) aircraft, where it takes off somewhat normally from the carrier using the Ski Jump and then once its dropped its bombs and burnt off most its fuel it comes back, a lighter aircraft, able to perform its vertical landing on the deck.
Ingame we can't simulate things such as the weight of weapons let alone even fuel and its weight so instead we have just made taking off vertically very difficult. While it is possible to do, it takes a very, very long time with a good chance of crashing your plane while doing it if you get it wrong and as such, your far better off just taxing to the runway on the carrier and taking off as its not only far safer but also much faster.

OT: when hovering, go up high (150 should cover it) and put your throttle to max. Watch your throttle reading go up in your HUD. As it nears 80-90 percent pull up hard so your nose is nearly pointing straight upwards. The throttle is still broken on jets for some reason so this delay is necessary, but by waiting until 80-90 percent throttle you should stop your harrier going whacky when waiting for the aircraft to realise what it's supposed to be doing

you can also set your Y axis to control land vehicle throttle and your rudder to control left and right in land vehicles, lets you move slowly to allow a gunner to engage on the move which is pretty cool.
Though make sure its perfectly zeroed, or it'll piss you off by moving you all the time.

Any server with the Test Airfield map, or if you wanna fly alone, just make a local server. All the air assets are on that map.

pushing forwards on the stick = pitch down, pulling back = pitch up
Yaw is rudder left and rudder right

It varies from plane to plane, but around 700 is the general rule. Just test and see how low you can go without loosing altitude. If your problem is running out of runway make sure that you cut the power as early as possible.

Keep dying trying that. I've managed to fly, loop loop, the lot, but I can't fecking land on that carrier consistently enough to fly in a game.

Carrier landings with the harrier need good throttle control. Dont forget as Rhino mentioned 50% throttle is 0 power. SO flying along close the throttle 0% once you start to slow right down hold some nose up (pull back) once the nose starts to come up (at low speed) put the throttle to 50% and level off. Then you will be hovering. Lower the throttle 45% you drop slowly. any thing above 50% you climb until you hit the point of nose dropping and flying forward. 65%+.
When hovering push forward on the stick to stay in the hover but start moving forward, just like a helicopter. Balance the throttle so you dont start to drop, but once you nose up to slow dow,n drop the throttle a little so you dont start to climb. Just like a helicopter.
Once over the carrier drop the throttle until you land on the deck. Put the throttle back to nutral 50% and use your stick to taxi. or the arrows.
As for jumping out of the plane, yes you will die but the 2 tickets for dying is better then the 10+ for your jet +2 for you. just respawn and get back in the jet. In other maps like kashan or silent eagle when jets take 15 mins to spawn it means your back in the air alot quicker.

40% throttle for F16, Tornado and Mig, 35% throttle for J10 and Eurofighter, 50% throttle for A10 and Frogfoot. That's all I can think of right now.

I recently bought a Joystick.
I already mapped all the keys needed for jets. But I have one problem, I can't set multiple keys for my squad mumble nor local mumble. How can I solve this problem? As of now I need to communicate trough teamspeak or VOIP.
Any advise would be awesome!

Haven't found a solution for that issue either, so I have to re-map my keys on Mumble every time I'm going to fly.
