There is good reason why people recommend you learn on a private server first, there are few things more frustrating than seeing a cobra flying around muttrah faceplant it into a crane...
Have a look for Rhino's TEST AIRFIELD map for some practice. It's got all of the aircraft in game (or most of them anyway), some ground assets like tanks and AAA vehicles, a bombing range, a carrier to practice landings, two RHIBs in the ocean with a bomb/ATGM lase and an AA lase in a mountain range. Use the map to get the basics down like taking off and landing on land, then on the carrier, insertions into the bunker area, attack runs and so on and so forth. When you think you're ready to try it in a server, you're not.

Keep practicing, load up some local maps on muttrah or beirut and practice landing in roads and alleyways, combat drops to specific places you know people use, learn the maps, attack routes, places where people commonly place fobs and AA emplacements, and try and simulate getting shot at as best you can. Then practice some more. Then try it in a server. I've been practicing myself for well over a year and a half and i'm only just starting to get confident enough to try it in public servers. I had a good sortie the other night as my first CAS operation as a pilot on muttrah. Had some good runs, took out a BMP but it pinged my engine good and proper in the process so we went down. You're always learning when you're flying. If you want some advice on learning landing zones and stuff, ask someone who's in a trans squad if you can sit in the spare seat in the front and watch what they do. Just try not to do it in the first initial rush when every squad wants a lift.
Practice, practice, practice!
ROBSEDIT: When you start the server, open the console (`) and type 'rcon debugenabled true'. If you die, type in global, team or squad chat 'rcon ready *first letter of your name*' and you will respawn immediately. To respawn the aircraft, find out what aircraft you are using in the layer. for example, i'm on al basrah and i'm practicing flying the apache. my command would be 'rcon spawner gb_ahe_apache' and the aircraft would appear right in front of me
