will teh polish, dutch, etc. forces have their own insurgency map...i think it would be nice to fight insurgents w/ diffrent weapons and maps

You could just look at their forums at recent map threads. The Canadians for example will get one which is already in game. The Russians will get one too, Paradrop-Map, quite interesting and with some cool caves. And maybe more, just look.

There is only one right now for the German. I don't want every map release by the German to be all insurgency

We have 1 insurgency map in design and 1 AAS in developement atm.

Several community members are working on insurgency maps. Not all have decided what faction will be used in them.
