Questions About ATI Crossfire

I've been working on building a rig for ArmAII. I never heard of the gamer prior to the announcement here that PR will be expanding it's lineup to that engine; which I must admit looks amazing, and appears to be what I wish so many other games actually were. The caveat being that it's a resource monster.
The motherboard I'm looking at is quad-crossfire capable, but I'm going to be needing 3 monitors. I've noticed that just ONE of the HD 5870's I'm looking at says it's capable of 3 monitors, but if I go to crossfire, can I still go to 3 monitors, or does it limit it to only 2? If it limits me to only two, then I may have to save up some extra cash to get 3 5870's - one for each monitor.
