IED tactics
I find myself using IED's as more of an 'offensive' type weapon lately. As in, instead of planting some IED's and waiting for convoys, I find it to be more fun to crawl through the grass and come up behind tanks/APC's. Or better, plant a mine behind the vehicle and an IED in front scaring him backwards into the mine.
Does anyone else employ this tactic also?

Indeed, hiding IED's and waiting patiently pays off.
In 0.85 I was able to "ambush" and destroy the following:
* 2 Logistic Trucks
* 1 BRDM-2
* 3 BTR-60
* 3 BRDM-2 with AT missiles
* 2 Russian soldiers

I like baiting in infantry to an area where I've laid down multiple IEDs. It's easy because whenever coalition forces see any insurgents they all come running in a big group. It works with vehicles too, but there is a higher risk of dying.

A couple of times now I've snuck up on vehicles and planted an IED right on or by them, detonated, and nothing happened!

Thats because your putting them on vehicles that 1 IED wouldnt kill anyways. Next time, put a mine down first under them, then put the IED on top of it, back off blw the IED, it makes them move slightly and sets the mine off. Though i have found myself using them for attack too. Ran into the US main on Fallujah, dropped an IED and blew a squad full of infantry. Also took out a combat engy trying to wrench one of myu mines up off their entrance.

I like setting a grenade trap on a corner then an IED nearby (but not too close). When the first enemy trips the wire the rest will come through and eat the IED. If they crawl past I have plenty of time to catch the squad as the cover for the last guy.
For sneaking up on vehicles an old tactic that still works is placing a mine under the vehicle and then placing an IED. Once the mine is active you can set off the IED to rock the vehicle, setting off the mine which will kill anything.
If I have plenty of time and do want to ambush I place many IEDs around an area with overlapping explosion radii so that strong vehicles are still destroyed and fast vehicles can't pass by a single explosion before I hit the button. Up to 10 IEDs can be placed at once by placing one and keeping the phone out, going back to the cache and reloading, then hitting right click to bring out the new IED. When you finally hit the button on the phone they all go off at once.

i guess that works for combat engineers too?

I also find the ambusher kit very fun to play. But it's often hard to defend a cache with ieds, unless you are in an organized ambusher squad. The chance that the americans will choose your road is simply not very high, especially if they know what they do.
Few days ago I saw a squad of insurgents doing very successful ambushes of vehicles and infantry exiting the main base on the Fallujah map. Both entrances can be covered from the corner building north from the west entrance but if the American team doesn't have anybody there, it will become impossible to leave the main base safely. (It requires a rope to get on the roof and there is very good cover so a single soldier can secure the entire base)
It's nice to have the explosives with you at any time. If I manage to incapacitate a member of American squad and have some time available, I put a grenade trap on his body. If the medic doesn't blow up right away, I throw the other grenade there. Then the medic panics and springs the trap or is killed by the second grenade. You can do similar with the ied but the chance the medic will come is much lower. Depraved tactics, I know.
On maps with a large dome of death, I find the bomb cars to be the most effective way to ambush the blue force. Camp near the base, see what's leaving, then ambush it from the rear.
