Selecting every accessory or even kit item from a menu as in America's Army and to a lesser extent Raven Shield is not possible in the BF2 engine. As dawdler said, the unlock toggle will be used to select variations of equipment within a given class (for example, a rifleman might choose between M16A4 with a close-combat optic or an M16A4 with an ACOG telescopic sight). This equipment will also vary by map and possibly be randomized.

The L85A2 with SUSAT optic will be standard for the UK rifleman class except on certain maps. Engineers, medics and possibly others will have the iron sights.

According to NATO Standardization Agreements, the 5.56 x 45mm cartridge must be used for their most common issue service rifles, just as 9 x 19mm must be used for their most common issue sidearms. This was so NATO forces could interchange ammunition in the field and in supply chains. It is also the reason why M16 magazines can be used with L85, and vice-versa.
BTW, when a military semi-auto or selective fire rifle uses a full-sized cartridge like 7.62 x 51mm (aka 7.62mm NATO / .308 Winchester) it is called a "battle rifle" rather than assault rifle.
Yes, NATO and US forces can and often do use 7.62mm battle rifles, but those are not really universal issue anymore for most NATO nations. They're usually something brought out for unit-level designated marksmen and/or special operations forces when a bit more "oomph" is required.
