there is a difference between a kitchen knife and a combat knife or similiar.
Ya but take into account that bullets are moving at incredible speeds and just the force of the bullet entering your body completely destroys surrounding tissues and organs and causes massive damage. Military vests usaully have metal/ceramic plates guarding vital organs which would easily stop a knife.
nowadays there is a bulletproof AND knifeproof best, but its not in service as far as I know.

And most of these parts that would kill you quickly are covered by armor and a knife surely will not pass threw a ceramic plate, but maybe a traditional bullet proof vest.
