Well, I'm fairly confused so far as to my experience with PR. Do you guys have a server to recommend for new people ? Places where we're led in the mood and can learn things ?

You can always start a local server and play against bots, even if there are some differences between co-op and multiplayer it will help you with the first steps like understanding weapons, vehicles and other stuff. Also don't forget to read the manual, it's big help when learning and really necessary to get started

I don't think there is any server in particular that is more helpfull than the other since it depends on the public players in the servers, but you should look for the squad names and join a squad that says something about infantry. Infantry squad leaders are often helpful to new players and it is more forgiving than missing a shot when gunning a tank and so on.
Just grab a regular rifleman kit, and let the squad-leader know that you are new but willing to learn and He or the other squad-members should help you out. If they don't want to help you they are just douches and you should join another infantry squad.

From my experience best EU servers are PRTA and NEW. Just joind squad and eay you are new, most SL with explaining everything needed to you. Although practicing in coop is also a good idea. It's good to know basic of every weapon, because even if SL won't give specialist kit to new guy, it sometimes needed to take it from somebody who is down and do it's job.
For beginning stay as infantry, try asset on public server only if you are familiar with them already(you can check them out in co-op)
