Well, thats a good question.
Actually, we do need more power to play some games such as crysis with very high video setting and high performance (lets say refresh rate FPS) but such cards (5800, 4870x2, gtx 295) sure are way too powerful for most games out there. Sure you'll get 100+ FPS (without vsync on) but the game will not use all the potential of these video cards, especially 5800 series with DX11 and Shader 5.0
Lets say it depend on what you do with your PC... If your main game actually is PR, it may not be worth it to use a dual-gpu video card or a 5800. Some games dont even make use of dual gpu cards yet.
In other words, some games/application require huge power, some doesnt.
Btw, your hd4870x2 is probably equivalent to a 5800 in terms of performance on actual games due to your dual gpu. The 5850 and 5870 are single gpu cards but still compete with actual most powerful cards on the market (gtx295 and hd4870x2).
About the price. Sure, some 400 bucks is expansive for a video card but I remember some cards about 600 bucks when released. And as for everything, the price will drop eventually.
We can be sure there will be games coming out in the upcoming months that will make use of all that power

From early reviews, I would say no though. It sounds like another die shrink with double the components on the card compared to the 4870. The early consensus is that it is an evolution from the 4870 and not the hoped for revolution.
Still a beast of a card though. The best thing they've done with this card is the power draw when idle. It is minuscule compared to the size of the card and how hungry it becomes under load.

The 5800 series is a lot greater than the 4800. Not a small upgrade.
Dx11 ready.
RV870 chip vs RV770 for 4800.
40nm technology vs 55 nm for 4800.
2.15 BILLION transistors vs 956 millions for hd4870.
Shader 5.0
etc.
